To give you an idea for Halloween I created a Mickey Mouse Pumpkin Cookie. The idea was to recreate The Mickey Mouse Pumpkin Sugar cookie from Disneyland. Since Disneyland was closed for 2020 it was the perfect way to bring some magic into our home.

A famous way to decorate your sugar cookie is with royal icing. This can be easy or tricky depending on how intricate you want your design to be.

Super Easy Royal Icing Recipe

  • 2 cups powdered Sugar
  • 2 Tablespoon meringue Powder
  • 1 tablespoon light corn syrup
  • 5 Tablespoons Warm water

Directions:

Add ingredients to the bowl of a stand mixer. With a whisk attachment beat all ingredients together until firm peaks form about 7-10 minutes.

The thing with royal icing though it doesn’t always taste great but it can make your cookie look beautiful. This recipe is really the only recipe I can handle. It goes well with the buttery taste of the cookie and also makes your cookies look beautiful once set.

Buttercream Frosting

Buttecream frosting is another way to decorate your sugar cookie. Although the design may not be as detailed so if you are looking for something to use for decorative purposes definitely use royal icing. Buttercream though adds an amazing flavor to it. Who can say no to frosting? I love adding buttercream frosting to my cookies because although I wish I was, I am not the best decorator. So buttercream frosting is my friend. It still gives the sugar cookie a beautiful look but is also very forgiving for the unsteady hand like myself.

ButterCream Frosting Recipe:

  • 1 cup unsalted butter ( 2 sticks) softened, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups Powdered Sugar

  • Add butter to stand mixer and beat on high with paddle attachment for 2 minutes until creamy.
  • Slowly add 1 cup of powdered sugar, vanilla extract and salt. Beat on medium high until well incorporated.
  • Scrape down sides and add remaining cup of powdered sugar and cream together for 2 minutes until it is nice and fluffy.

The point of baking delicious sugar cookies is to enjoy with others. To come together during a holiday and celebration and enjoy good food and good company. So I encourage you to have fun with your cookies. I love to add color and sprinkles to mine because it’s what I know my kids would enjoy and it makes it fun for me too.
