I cannot believe it’s already October! This year has felt like the fastest slowest year ever. That means all the fun holidays are just around the corner but Disneyland remains closed. We miss our happy place but are trying to find ways to be creative. The kiddos love watching all the shows and movies on Disney+ and we’ll watch YouTube videos of the Parks to make us feel like we are there. Ever since Spooky season started at Walt Disney World, I decided to bring fun Halloween Inspired Disney Treats into our home.

Mickey Mouse Pumpkin Sugar Cookie
My Family and I loved all of the Halloween Treats Disneyland offered last year so, this year I took four of my favorite Fun Halloween Inspired Disney Treats and created recipes to make us feel a little magic in our very own home.

I’ve tried many sugar cookie recipes throughout the years and I was finally able to come up with a simple and delicious Sugar Cookie Recipe.
Ingredients:
- 1 Cup unsalted Butter (2 sticks)
- 3/4 Cup Granulated Sugar
- 1 egg
- 2 Teaspoon Vanilla Extract
- 1 Tablespoon Baking Powder
- 3 Cups Flour (sifted)
- orange food coloring
Directions:
- Cream Sugar and butter in the bowl of your stand mixer. I use this one
- Scrape sides of bowl and add vanilla and egg
- Mix in flour ingredients, make sure to scrape down sides so everything gets well incorporated
- Add orange food coloring to desired shade
- flour a a clean flat surface and with your rolling pin roll out your dough to about 1/2 inch thick
- Use your Mickey Mouse cookie cutter and cut out your shapes. I bought mine on Amazon
- With a toothpick create a Pumpkin design on your cookie before baking.
- Place cookies on cookie sheet
- with the excess dough create a little stem and place in between ears.
- bake at 350 degrees for 10-12 minutes.
- Allow them to rest on the baking sheet for 2 minutes before moving to a cooling rack
How To Decorate Mickey Mouse Pumpkin Sugar Cookie

You’ll need some Royal icing to make the designs on the cookie. Royal icing is super easy to make and can be used with what is already in your pantry.
Super Easy Royal Icing Recipe
- 2 cups powdered Sugar
- 2 Tablespoon meringue Powder
- 1 tablespoon light corn syrup
- 5 Tablespoons Warm water
Directions:
Add ingredients to the bowl of a stand mixer. With a whisk attachment beat all ingredients together until firm peaks form about 7-10 minutes.
Add Royal icing to two different bowls and add yellow food coloring to one for the face design and green to the other bowl for the stem.
